Ratatouille


Tonight I made Ratatouille for dinner and it was amazing, so here is the recipe:



Ratatouille
1 lb. Eggplant sliced
salt and pepper to taste
McCormick's Italian seasoning (grinder) to taste
Adams reserve citrus rub
Olive Oil
1 Large Onion sliced
1 green bell pepper seeded and sliced
1lb. Zucchini sliced
4 Tomatoes peeled and sliced



Sprinkle the eggplant with salt and let "sweat" for an hour; rinse and dry.

Heat 2 tbs olive oil in frying pan and lightly fry the onion. Add an additional 2 tbs olive oil and add bell pepper and zucchini. Continue to fry gently.

Add eggplant and continue to cook. Then add tomatoes; add salt, and pepper.

Grind Italian seasoning and sprinkle with citrus rub.

Cook for about 40 minutes; covered.
